Im Süden Mexikos liegt eine der weltweit letzten Biosphären – hier wird unser Kaffee in nachhaltiger Landwirtschaft in einer Kooperative angebaut. Ab 1100 m ziehen sich die kleinen Plantagen an den Hängen der beiden Vulkane El Triunfo und Tacana hinauf. Die Tasse­ ist leicht, sehr aromatisch und zeigt wenig Säure. Man schmeckt Noten von Beeren und Schokolade.
